Sausage Seasonings

This is a surprisingly complicated area, and it is vital to the overall appeal of the sausage. Seasonings provide colour and appearance when raw, and of course they give the sausage its taste. The taste will have a "profile", the longer the profile the more the taste is left in your mouth. The majority of competitors' seasonings are made with the oils distilled from herbs and spices, which are then "carried" on salt.

Instead of this we prefer to use herbs and spices that have been ground and rubbed. This is a simpler process that uses generally better (and substantially more expensive) ingredients, however it gives our sausage a far more "satisfying and mouth filling" taste, or longer "profile".


All our sausage mixes are blended by ourselves to traditional recipes and are all tried and tested in our development kitchen.

Complete Mix for Haggis


1.135 Kg of our Haggis mix will make up to 4 Kilos of Haggis

Suggested Method of Preparation:

1. Remove windpipe from plucks. Wash and boil for a minimum of 30 minutes then mince.

2. Blend minced suet, meat and haggis mix then add stock/water and remix thoroughly

3. Fill into ox bungs or artificial casings, tie ends and re-cook for 75-90 minutes at 80degrees C

I have used smoked paprika, natural hickory smoke and a few of my favourite herbs and spices to create a very special sausage for the barbecue season.

Goan Vindaloo sausage


This dish was brought to Goa by the Portuguese and soon became a popular Goan dish often served during special occasions. Historically this was a Pork dish cooked with plenty of wine vinegar and garlic, however it soon received the Goanese treatment adding plentiful amounts of spice and chilli. We have followed authentic recipes to produce this sausage for the brave.

Made with garam masala, red and green chillies, garlic and ginger. This sausage is a favourite at our famous sausage party nights and although very hot has a wonderful flavour.
